Mix all of the ingredients in a bowl. Leave them to macerate for 15 minutes.
Preheat the barbecue to a high heat. Oil the grill.
Place 4 chicken thighs side-by-side flat on the work surface. Insert two long parallel skewers through the meat.
Reduce the barbecue to a medium-low heat. Place the chicken on the grill and rub the remaining marinade on the meat. Grill the chicken on each side for 6-8 minutes or until cooked.
Prepare the green salad with the cherry tomatoes.
